What is Morisqueta?
Morisqueta, it is a dish that is commonly found in the state of Michoacan, Mexico. It is simply a dish that contains white rice, refried beans, and a tomato chili sauce with some type of pork. Very often is cotija cheese and Mexican crema are added to enhance the dish. This dish typically is a side dish for Tostadas or Taquitos or can be eaten by itself. But for this recipe, it is going to be a little different than the traditional way.
Growing up my mother never really made morisqueta the traditional way. According to her she just did not care for the pork and flavor combinations of the traditional way. So she never made it that way for us. Which honestly I’m okay with because her version is so amazing. Not to mention her version is vegetarian and vegan for those who just remove the cheese.

So, according to my mom, there is a special way to make the rice for this dish. The day before you make this dish you want to wash your rice until the water is clear. Like when you make sushi. Once it is washed pour out your drained rice onto some towels and let it dry overnight. On the day of, you want to bring your water to a boil with the garlic and salt. When your water is boiling, add the dried rice and cook like normal.

Rice is typically a 1:2 ratio (1 cup rice to 2 cups of water)
- Boiling
When your rice and liquid in your pot is boiling. You want to let it go on medium to low heat with a lid on until the rice has absorbed half of the liquid.
- Turn it off
Once it has absorbed half the liquid turn the heat off. Leave the lid on and do not touch or move it for 20 minutes
The next thing you want to work on is your refried beans. If you have your own recipe go ahead and make it. Just make sure to leave it soupy because you want to spread it across the rice. But if you do not have your own favorite bean recipe, you can go check out mine. It will teach you how to make beans, as well as refried, beans.
The final step would be to slice up your veggies. If you make this with Tostadas or Taquitos then you saved yourself some time. To put this together all you have to do is serve yourself a nice portion. Pour some of the beans over it and load it up with veggies and cheese. And if you are able to eat dairy then a nice dollop will bring it all together!

Ingredients
RIce
- 2 Cups Long grain rice Washed until clear, and dried overnight
- 4 Cups Water
- 1 Tbs Salt
- 2 Garlic Cloves
- 4 Cups Refried beans
- ½ Cup Cotija Cheese
- Cabbage Your desired amount
- Tomatoes Your desired amount
- Potatos Boiled and peeled
- Mexican Crema Your desired amount
Instructions
- The day before you make this dish, wash your rice until the water comes out clean. From there you want to place your clean rice onto some towels and let it dry overnight.
- On the day you are going to make this. In a large saucepot add you water, garlic, salt and bring to a boil. Once the water is boiling add your rice cover it with a lid and reduce the heat to medium low.
- As soon as your rice has absorbed half of the water turn off the heat. Leave the lid on and do not touch it or move it for 20 minutes.
- Next you want to prepare your beans, when your making your refried beans you want to make sure you leave them soupy.
- At this point you want to slice up all of your vegetables that you choose to use.
- To put this together its super easy. Serve yourself some rice, add some scoops of beans, then add your desired vegetables along with some cheese and mexican crema

How do you eat morisqueta?
Since this version of morisqueta does contain pork or meat you can pair it with other things. Like I have mentioned before these go great with taquitos or tostadas. But if you are going to make it with anything then I recommend tostadas because a lot of the ingredients are cross utilized. Plus it will save you time. When actually eating the dish personally I love to mix it all together. That way you get a little of everything in each bite. Plus the crema will make it creamy like a risotto. AND it makes it a lot easier to scoop up with your tostada.
Honestly, I truly love this dish it is so simple but SO satisfying. So if you are ever in a pinch or date someone who is vegetarian then make this! It is so good and sure to impress your taste buds!
