Sopa de Arroz or Mexican red rice, there is not a lot to say about this dish except that it is a staple in a lot of Mexican dishes. It is a classic side dish that gets pared up withΒ Carne Asada, Caldo de Pollo or Res, and so much more. The ingredients are simple and can be utilized for many other things if there is any leftover product. In a lot of my future recipes, this is going to be the recipe I would suggest to go along as a side dish.

Sopa de Arroz
Equipment
- Saucepot
- Wooden spoon
- Blender
- Knife
- Measuring cup
- Liquid measuring cup
- Can opener
Ingredients
- 1 Roma Tomato Cut in quarters
- ΒΌ Onion White or yellow
- 2 Cloves Garlic
- 1 Can Tomato Sauce 8oz
- 4 Cups Water 1 Cup for blending
- 3-4 Tbs Canola oil
- 2 Cup Long Grain Rice
- Chicken Bullion To Taste
Instructions
- In a blender add the tomato, onion, garlic and one cup of water, blend until smooth and set aside
- In the saucepot add the oil and rice and toast until lightly brown
- Once toasted add the tomato mixture into the pot along with the leftover cup of water and 8oz of tomato sauce
- Salt with the chicken bullion to taste
- Bring to a boil and reduce to medium heat
- As soon as the rice has absorbed two-thirds of the liquid turn off the heat. The steam will finish the cooking process without burning it

Mexican Rice Ingredients
In order to make Mexican rice, you don’t need a lot of tomato sauce. So I recommend buying the 8 oz can at Walmart for 50 cents. Tomatoes, onions, and garlic are cheap ingredients and staples for Mexican food. When it comes to the rice at Walmart. You are able to buy a 20-pound bag for $8.48, this can last you for months. Rice is an ingredient everyone should have in their household. There is a lot you can do with it, both savory and sweet. Finally, the chicken bullion is not necessary and can definitely be replaced with salt.
Extra Fancy
When making this dish, you have some options when it comes to add-ins. Depending on your preference or the meal that the rice is going to be accompanying, you can add a can of mixed veggies. Or you also have the option of adding a can of corn, which is more prevalent in my family. In the end, it just comes down to your preference, I hope you enjoy!
