I know what you are thinking, sweet potato jumble, really why? Eating the same old Mashed potatoes, Baked Potatoes, Green beans, and Broccoli can be so boring. Yes, they taste good but there has to be more pazazz you can add to your side dishes. Well, dont fret! Cause I have a side dish that is a party for your mouth. Not only does it have sweet potatoes but also three different types of veggies. It is simple to make and will go great with grilled steak, salmon and chicken! To make it even better you can pair it up with a chimichurri sauce that takes this side dish to another level.
Sweet Potato Jumble Direction Help
Since the potatoes are going to be the longest part of this recipe, you want to take care of this first. Peel and carefully dice up your potatoes you want them to be bite-size pieces. However sweet potatoes are hard to cut when they are raw so make sure you dont cut off your finger. Once you have diced up all of your potatoes you want to place them in a pot and boil them until they are partially cooked. When you are able to slightly stick a fork in them. Drain them and set it off to the side
While your potatoes are boiling you want to start slicing up your peppers and cherry tomatoes. This part is easy and simple. For the peppers just wash them and deseed them. Just like the potatoes, you want to dice them up into bite-size pieces. Except for the tomatoes, you can either leave them whole or slice them in half.
Once you are done slicing everything up, go ahead and roast your veggies. You want to add your sweet potatoes, peppers, and tomatoes to a large baking sheet. Add your oil, then salt and pepper them. While they roast in the oven you will make the chimichurri. However, once they are done roasting just mix everything together and it should be good to go!
Chimichurri Direction Help
Traditionally chimichurri is made with parsley, but I’m Mexican so instead, I’ll use cilantro. If you are one of those poor souls who was cursed with the cilantro soap gene. It is ok, you dont have to use cilantro just sub it out with parsley. To make this, roughly chop your cilantro garlic and serrano. Throw it into a mortar and pestle and roughly grind it for one to two minutes. From here you want to add the juice of half a lemon give it a quick mix and transfer it to a small bowl. Once everything is transferred, add the juice of the second half of the lemon, your oil, and add salt and pepper to your taste.
If you are not using a mortar and pestle. All you have to do is to finely slice your cilantro, you dont want it crazy small but you also do not want it to be whole. As well as your garlic and a fourth of your serrano. Once they are sliced add them to a small bowl and squeeze in the juice of the whole lemon, add in your oil and salt and pepper it to taste.

Ingredients
- 2 Sweet Potato Pealed, Diced, Par-Cooked
- 1 Poblano Pepper Deseeded and Diced
- 1 Yellow Pepper Deseeded and Diced
- 8 oz Cherry Tomatoes Halfed
- 3 Tsp Oil
- 3 Tsp Salt
- 1 Tsp Paprika
Cilantro Chimichurri
- 1 Lemon
- 1 Garlic Clove
- 1 Cup Cilantro Or Parsley
- ΒΌ Serrano Pepper Deseeded
- 1 Cumin Pinch
- 3 Tbs Olive Oil
Instructions
For Jumble
- Wash all your produce and preheat oven to 350 F
- Peel your sweet potatoes and dice them into bite-size pieces. Par cook them in a pot of boiling water
- While the potatoes are par cooking you want to dice your peppers, and slice tomatoes.
- Once your potatoes are done par cooking and everything is sliced place the veggies on to a large baking sheet and drizzle 1-3 tsp of oil,salt, and pepper Roast for 20-25 minutes.
For Chimichurry
- Roughly chop cilantro, garlic, and serrano into small pieces and place in a small bowl.
- Squeeze the juice of the lemon into the bowl, add a pinch of cumin, three tbs of olive oil and salt and pepper to taste.

How Do You Eat This
This side dish is very savory, the first time I had this was in one of my Hellofresh boxes. It tasted ok, but after some tweaking, adding and subtracting of ingredients I’ve made it into something better. However like I mentioned it is savory and what I found that goes great with this is any grilled protein. I love it with some grilled chicken thighs but it also tastes great with steak or grilled fish. The chimichurri sauce can be used for both the protein and jumble but I prefer it with the jumble it just adds another layer of awesome.
