Its Pasta Time!
As I mentioned last week there are a lot of great boxed food items out there you just need to know how to utilize them. One of my most favorite dinner hacks is Betty Crockers Suddenly Pasta (the classic version). This box of pasta has so much potential that it is really easy to take this to another level. Not to mention that it is super cheap and can easily feed a whole family with a few add-ins here and there. Not to mention it is one of my husband’s favorite lunches because it tastes awesome cold and hot. So let’s go pimp out this box of pasta!
Lime Salmon Pasta Direction Help
First things first, you want to find yourself one of these bad boys! I am confident that you have seen his box at least once in a grocery store they are super cheap and easy to make. Following the directions on how to make the pasta, make your pasta DO NOT MAKE THE DRESSING. A helpful tip, when making the pasta, add a teaspoon of salt for flavor and a tsp of oil to prevent your pasta from sticking when you drain it.
After your pasta is cooked, drained, and set off to the side we want to work on our salmon. It is up to you how many files you want, I only did three because it is my husband, his lunch and me. When prepping your salmon you want to aim for citrus and spice. Which is why I recommend you season your salmon with salt, pepper, garlic and herb seasoning, lime zest, and Japanese seven spice. You don’t have to use Japanese seven spice, I didn’t have any cayenne so I used it instead. If you do have it then, by all means, go ahead and use it unless you don’t like spice.
While your salmon is cooking in the background, skin side down with a few tablespoons of oil. You want to work on your broccoli. Now I know it looks boring but you can also add cherry tomatoes and carrots but my husband is picky so I hold back. For your broccoli, you want to saute it until it is soft, but still has a crunch to it. Season with a pinch of salt.
The last thing we need to work on before we throw everything together is to make the dressing. So for this step, you want to prepare it as the box says. But instead of the three tablespoons of water, you want to substitute one tablespoon with lime juice. Once that is done all that is left is to throw it all together. No special instructions for that, just add the rest of the lime juice, cilantro, and more spice if you want it.
Lime Salmon Pasta Recipe
Lime Salmon Pasta
Equipment
- Saute Pan
- Cutting Board
- Knife
- Zester
- Juicer
- Sauce Pot
- small bowl
- Colander
- Measuring spoons
Ingredients
For Salmon
- 12 oz Salmon Divided into four fillets
- 4 Tsp Salt
- 2 Tsp Pepper
- 2 Tsp Garlic and herb Seasoning
- 2 Tsp Japanese Seven Spice or Cayanne
- Zest of one Lime
- 2 Tbs Olive Oil
For Pasta
- 1 Box Betty Crocker Suddenly Salad Classic Version
- 1 Lime Juiced
- 4 Cups Broccoli Steamed
- 1 tsp Japanese Seven Spice
- 1 Tbs Cilantro
Optional
- Cherry Tomatoes
- Green Onions
Instructions
- Marinate you, Salmon, with the first five ingredients. Saute with olive oil until fully cooked about 5-7 minutes each side.
- In a steamer or microwave steam your broccoli until it is partially cooked.
- Prepare the boxed pasta as directed. When making the dressing substitute tablespoon of water for the juice of the limes.
- When pasta is fully cooked and drained, pour it into a saute pan, along with your broccoli, cilantro, and additional veggies of choice. Incorporate your dressing along with the rest of the leftover lime juice.
- If you want your pasta to be spicier sprinkle over one teaspoon of cayenne pepper
