- 3.5 oz Achiote Paste
- 2 ea Garlic Cloves
- ½ cup Lime or Orange Juice
- 3 ea Chicken Thighs
- Salt To Taste
- Pepper To Taste
Blend your Achiote Paste, Lime Juice, and garlic in the blender until smooth and set off to the side.
Season your chicken with salt and pepper and marinate with the achiote mixture for a minimum of an hour or overnight
Place marinated chicken in baking dish, and cover with aluminum.
Bake at 350 until chicken has reached an internal temperature of 165 degrees
