Ingredients
  

  • 3.5 oz Achiote Paste
  • 2 ea Garlic Cloves
  • ½ cup Lime or Orange Juice
  • 3 ea Chicken Thighs
  • Salt To Taste
  • Pepper To Taste

Instructions
 

  • Blend your Achiote Paste, Lime Juice, and garlic in the blender until smooth and set off to the side.
  • Season your chicken with salt and pepper and marinate with the achiote mixture for a minimum of an hour or overnight
  • Place marinated chicken in baking dish, and cover with aluminum.
  • Bake at 350 until chicken has reached an internal temperature of 165 degrees
